Obesity: A Growing Concern

Obesity among U.S. adults has almost doubled since 1980.
In 2000, 400,000 Americans died of health problems associated with Obesity.
The National Institute of Health cites Obesity as second only to cigarettes as a leading lifestyle-related cause of death.
In 1998, childhood obesity was declared to be an epidemic by the U.S. Surgeon General.
In 500 A.D., consumption of sugar was zero lbs./person/year.
In 1800, approximately 4 lbs. of sugar/person/year in America, was purchased.
By 1975, the number was up to 118 lbs of sugar/person/year. Almost 30 times the amount consumed in the 1800’s.
By 1998, we reached 158 lbs. of sugar/person/year.
A late 20th Century Frenchman whose diet was higher in fat and ate equal amounts of meat and fish compared to an American, and 4 times as much butter and cheese, had 60% less Heart Disease than the late 20th Century American.
Between the mid 1980’s and the mid 1990’s, the percentage of daily Calories from Fat in the American Diet decreased from 40% to 33% (thanks to the low fat diet craze). At the same time, Obesity in America increased significantly.
From 1910 to 1970, Coronary Heart Disease in America escalated from an almost non-existent problem to the number one cause of death. During this time, we had a significant decrease in the intake of Animal and Butterfat. While Dietary cholesterol did not increase, sugar intake increased dramatically!

Why Does the Body Gain Fat
Gaining fat is a process that requires a certain set of physiological parameters. If your lifestyle promotes these parameters, you will put on weight. The same parameters that increase fatigue, inflammation, accelerated aging, and disease also cause you to gain weight. For this reason, the successful weight loss requires that you simultaneously diet and address the health conditions impairing your ability to slim down.
Some of the physiological states that would cause you to gain fat:
1) Elevated insulin/blood sugar levels, a pre-diabetic state: Patients with diagnosed Diabetes, Syndrome X or a family history of diabetes should consider learning to manage their health with nutritional changes.
2) Increased stress: Cortisol encourages the body to deposit fat around the middle of the torso causing an “apple-shaped” body
3) Low thyroid function: Hormonally, the thyroid is responsible for stimulating metabolism in every cell of the body. Therefore, low thyroid function causes low energy and weight gain
4) Circadian rhythm dysfunction: If your daily routine does not correspond with the rise and fall of the sun, you may gain weight more easily.
5) Incomplete digestion: When digestion is disrupted, the body does not receive the nutrients that it needs and responds by hoarding the calories from all the food you eat.
6) Hormonal imbalances: The entire hormonal system works together. So, in addition to the thyroid hormone and cortisol, improper balance of sex hormones can contribute to weight gain.
7) Dysbiosis/Candida: An unhealthy culture of bacteria in your gut will cause inflammation and incomplete digestion.
8) Insufficient nutrition (malabsorption or lack of consumption): If your gut is inflamed or the gut lining is unhealthy, you will not absorb appropriate nutrients and this may cause you to gain weight
9) Food allergies/Sensitivities: Your system may react negatively to individual foods producing an array of common symptoms of food sensitivities. One of these symptoms is commonly weight gain.
10) Accumulation of toxicity: As most toxins are fat-soluble, often high levels of toxicity will correspond with significant weight gain. As well, an inability to efficiently eliminate toxins will prevent weight loss.

The Hormone Factor: Blood Sugar, Insulin and Cortisol
Your food choices dictate the physiological effects that eating has on your body. For instance, carbohydrate-rich meals convert quickly to glucose in the blood and cause a dramatic spike in blood sugar. When blood sugars rise, so does insulin. The body secretes insulin to aid with the utilization of elevated blood sugar. But, when the amount of sugar in the blood exceeds the cells’ needs, insulin instructs the body to store the extra energy as fat. Not only does insulin increase fat storage, it also prevents release of stored fat. Historically, this physiological process helped to protect hunter/gatherer societies from starving when food was scarce, but today, in our culture of abundance, this action advances obesity, diabetes, heart disease, high blood pressure and many other health conditions. Learning to balance the types of foods you eat in a meal will affect this detrimental cascade by keeping blood sugars in a stable, healthy range and leveling insulin output. If you continue to choose foods that cause your blood sugar to rise and fall in this manner you will be unable to escape symptoms such as fatigue, irritability, headaches, difficulty concentrating and carbohydrate or sugar cravings. Fortunately, the body releases another hormone, glucagon, which opposes the activity of insulin. Glucagon is secreted when blood sugars are balanced (consumption of protein and fats) and shifts your metabolism to burn fat.
